Inbal’s Beetroot Burgers

4 small beetroots, grated
2 carrots, grated
100 g feta cheese, finely crumbled
2 eggs
½ cup wholewheat flour
½ tsp baking powder
½ red onion, finely chopped 1 cup mint, chopped
Salt & pepper
Pre-heat the oven at 180°C

Take the beetroot and carrot, squeeze out the juice (pour the juice
into a glass and put it in the fridge, mixed with apple juice, it
makes a lovely healthy drink!)

Mix all the ingredients together

Shape the burgers into traditional size or lunch box minis with a
cookie mould

Bake for about 15 to 20 minutes. Alternatively fry in olive oil until
golden brown
Get your buns, fillings and condiments ready. Yum.
