Serves 2 people
350 g brown rice linguine
3 handfuls of spinach
2 medium cloves of garlic
1 large avocado
150 g cashews
1-2 handfuls of fresh basil
100 g vegan cheese, grated
1/2 lemon squeezed
1 cup water
1 tsp salt
Add all the ingredients into the blender and blend till it is smooth. Allow it
it to be a bit thick to start with.
Boil the pasta according to the instructions and keep the water. Thin and
heat the sauce by adding some of the hot pasta water.
Mix the green sauce with the pasta in a preheated serving bowl or
straight into the pot.
Serve with carrot sticks
